CyDelete lets you uninstall Cydia applications directly from the springboard just like normal appstore applications. Just hold a springboard icon down and tap on the X and the app is uninstalled. To reinstall, load Cydia and install the app again.
CyDelete is available in Cydia through the BigBoss repo

About time.
I installed this and it disabled Winterboard (iPod Touch). Since I had to choose I picked my Tap To Unlock theme from Winterboard (I unlock a lot more often than I uninstall)
